Hey, thanks for adding to the discussion! I myself have recently moved to a new neighborhood (Shincheon, near Jamshil) and have found a place up the street that roasts their own beans. The place obviously cares a lot about the quality of th coffee, more than making up for the spartan interior. The owner of the place actually teaches classes for coffee roasting and preparation.

From Shincheon station Exit 4, go to the McDonald's and turn left. You gotta walk quite a ways up the street. It's on the right side, 2nd floor, called "커피 볶는집" (simply: "Coffee Roasting House"). The sign is brown, but unfortunately it's all in Korean. You can see their roaster in the window though. When you pass the "Boobi Boobi" bar, you're almost there. When you come to a long street on the left that is kind of a market, you've gone a little too far. When you come to the Mini-Stop, you've gone way too far.

I accidently stumbled across this page while looking for something else, but since I'm here, I'll share my favorite Seoul coffee shops with everyone.

If you are anywhere in the Sinchon/Ewha area, go visit the best little independent coffee shop I've come across in Seoul. The name of the place is "Bean Tree 200 25". I know... strange name, but they are deadly serious and super ethical about their coffee there. It is a cosy and quiet little place where they roast all their own beans, and best of all, the coffee is great. You will find it on the main road (Sinchon-ro) exactly half-way between Sinchon and Ewha University subway stations (circle line 2) on the north side of the street across from the Posville officetel.

Another cute little independent place near Ewha University and is called "Waffle It Up". Yes, it is mainly a waffle place, but the coffee isn't bad either. Check out their website (http://www.waffleitup.com/).

Yet another independent is a place called "Beans Bench". You will find it just south of the Aeogae subway station (Line 5 - Exit 4) on the ground floor of the SK Hub building. Super nice environment and the coffee is excellent.
